After skimming 100 liters of milk, you’ll get about 8 to 12 liters of cream. The fat content of the cream obtained is typically between 30 and 42%.

Preparing the cream for butter-making is very important, as it can affect the taste, aroma, and quality of the butter. Ideally, use cream that is 2 to 3 days old for making butter, which has been stored at 5 to 8 °C (in summer) or 8 to 10 °C (in winter). The cream is either processed directly in a butter churn or pasteurized in a pasteurizer before processing. Pasteurization of the cream is recommended. The pre-chilled cream is heated to a temperature of 12 to 14 °C. The cream container of the butter churn must not be filled beyond the agitator. The longer the churning time, the better the quality. Depending on the set speed, the butter is ready after 20 to 35 minutes.

With the drain valve open, the butter can be pre-kneaded using the machine. Afterward, the butter is kneaded in portions with damp hands and washed repeatedly until every last trace of buttermilk has been kneaded out of the butter. The cleaner the butter, the longer it will keep—butter that still contains buttermilk will go rancid more quickly. The individual portions are placed into a wet butter mold—taking care to ensure no air pockets form. The butter is then allowed to cool slightly and is knocked out of the butter mold. From 100 liters of milk—or the 8 to 12 liters of cream obtained from it—you’ll get about 4 kg of butter and 5 to 6 liters of buttermilk, which can be bottled.
